Your going to want to get out of Christchurch in NZ. Used to be a really cool spot, but the earthquakes just really fucked up the town center. Kaikoura to the north and Dunedin to the south are both really cool spots. Kaikoura has snow capped mountains (you can day hike to Mt Fyffe and get a wonderful view of the ocean/Kaikoura mountain range. Also has a TON of marine wildlife, seals, whales, dolphins, albatross etc.
