I see you Gangs of New York and raise you The Departed- it wasn't until then I actually, truly, stopped seeing Leo DiCaprio and started seeing a an actor.

It started with Gangs of New York though. After that he had an incredible run of films: Catch Me If You Can, The Aviator, The Departed, Blood Diamond (he should've had a Best Supporting Oscar for his work in either of the last two). That's as good a run of four movies as you an expect from any actor.
I haven't seen Revolutionary Road or Body of Lies, but Shutter Island and Inception are also top-notch acting jobs. He's had a great run over the past decade, one of the best in the business in my opinion.
Too bad most people will only ever see him and think of Titanic.

I never once thought of Titanic while watching The Departed. His acting in this movie was unblemished. "His balls dropped as an actor" was said by some critic. I agree.

Jim Carrey in Eternal Sunshine. It almost makes me wish every slapstick comedy actor did a serious flick once in a while. I'd really love it if Anna Farris played a serious role.

Everyone who doesn't respect Jim Carrey as an actor always shuts up after watching that movie. He was great, he should do more.

This is kind of a difficult question. Do you mean what film an actor was in that made them popular or maybe when they finally sort of hit a homerun at their craft?
My personal vote would be Pulp Fiction for Jon Travolta; the film turned him from a b-rated joke into a legitimate star again.
Sin City put Micky Rourke back on the map, and The Wrestler legitimized him as a serious actor.
However, I think we often give actors and actresses too much credit. Great scripts and great Directors often play a much more pivotal role in what an actor can accomplish.
In the Shawshank Redemption we undoubtedly see Morgan Freeman and Tim Robbin's best performances of their respective careers. Morgan Freeman also had Driving Ms Daisy, but to be honest I haven't seen any work of real substance from either of those actors since.
Hayden Christiansen was praised for his breakout performance in Life as a House and Natalie Portman has received tons of praise for Black Swan, but look at their rather underwhelming performances in the Star Wars prequels.
I also agree with the Jim Carrey example in another comment for Eternal Sunshine, but again you are dealing with Michael Gondry. I think it will be a very rare thing to find an amazing performance from an unsuspecting actor without the back up of a solid script and or director.

I see your point. And the answer to your question is option b: When an actor hit a homerun in their craft.
And agree that often time a great performance will come from a great script/production. But not always. And more importantly, many actors can take a small role, and steal the show away. I think Giovanni Ribisi pulled this off in Saving Private Ryan. With an ensemble cast there will always be someone who stands out a little bit more than the rest, and I thought his performance was absolutely amazing.

I sorta felt this way about George Clooney after I saw him in "Up In the Air". He was so real and human. I definitely had a newfound respect for him as an actor. The Ocean movies were pretty cool, but he was probably one my least favorite characters in them. idk
